pitta "pizzas"

I was really craving pizza one night last week, so in a bid to save money and have a healthier meal, I concocted these faux pizzas out of a single pitta bread and some ingredients I had lying around! They're surprisingly convincing as pizza substitutes, and great if you want a light but tasty meal. Plus, with just 5 minutes of preparation time (max) and roughly 5 minutes under the grill, they're super quick!


Ingredients (makes 2 "pizzas"):
- 1 pitta bread
- 1 tablespoon of tomato puree
- 2 tablespoons of mozzarella
- Toppings of your choice! I decided on parma ham and spinach leaves


Method:
1. Open up your pitta into two halves. Use a knife or kitchen scissors if needed.
2. Spread roughly half a tablespoon of tomato puree over each pitta half.
3. Sprinkle about a tablespoon of mozzarella on top of each slice.
4. Add your toppings of choice!
5. Stick under the grill at full heat for roughly 5 minutes, or however long it takes the mozzarella to melt and the pittas to begin to toast.
6. Done! Serve alone or with a side of salad.
